Requirements
- Diploma from a recognized Hotel School
- Professional HACCP Certification
- Minimum 2 years of experience in a similar management role onboard cruise ships or in large-scale 4/5-star hotel restaurants (500+ seats).
- Excellent knowledge of Public Health Policies and safety regulations.
- Strong leadership, motivational, and coaching skills with a guest-focused, positive personality.
- Good knowledge of Microsoft Office, Lotus Notes, Costa Planet, Mistral, T&A, DRS, Meal Counts, Service Time, Crunch Time, H.E.S.S. procedures.
- Advanced proficiency in English and Italian (B2+) plus one additional language (German or French, B1+)
- Professional appearance, impeccable hygiene, and outstanding work ethic.
Responsibilities
- Supervises and delivers an excellent service to Guests in the assigned specialty outlet increasing profitability. Trains, motivates, mentors and provides regular constructive feedback to the team to achieve service and sales goals.
- Supervise daily operations of the assigned specialty restaurant, ensuring service excellence and adherence to brand standards.
- Oversee restaurant setup including ambiance, lighting, music, and furniture arrangement.
- Manage reservations and maintain accurate records of requisitions and guest preferences.
- Deliver premium guest experiences, coordinating with the Executive Chef to accommodate dietary requirements and special requests.
- Train, motivate, and mentor the restaurant team to achieve sales and service goals.
- Conduct audits and spot checks to ensure inventory accuracy, cost control, and operational efficiency.
- Enforce compliance with HACCP/USPH sanitation standards and contribute to the onboard safety culture.
- Monitor food waste management and uphold hygiene protocols with impeccable standards.
